My Go Bananas Bread

This recipe has been tested and approved by every member of the Modlin Clan for years.  I love it because it’s an easy make ahead breakfast, and my kids could literally eat this all day, everyday.. If only it lasted longer than a day. This recipe is a double batch because, well, I have a SUPER SIZED family, but you can literally cut the ingredients in half and you’ll get one delicious loaf.

 

Ingredients

  • 6 Ripe bananas
  • 1 1/2 cup white sugar
  • 2 egg
  • 1/2 cup plus 4tbsp melted butter
  • 3 cups all purpose flour
  • 2 tsp baking soda
  • 1 tsp cinnamon
  • 2 tsp salt

 

 

Preparation

Preheat oven to 330 degrees. Grease 2 9X5 inch loaf pans.

Add sugar to the ripe bananas and mix until it’s a pasty consistency (about a minute)
 
 
 
 

 

 
 
Add eggs
 
 
 
 
Add melted butter
 
 

 

 

 

 
Mix until your wet ingredients are incorporated (no longer than 1 minute)
 
 
 
 
This is where you would usually grab another mixing bowl to prepare your dry ingredients, but I find that adding your flour and baking soda over the batter works out just fine (and It’s one less dish to wash)
 
 
 
 
 
Mix Flour, baking soda, and batter together.
 
 
 
Scrape the bowl with a spatula to get all of the dry ingredients into the wet mixture.
 
 
 
Add the cinnamon,
 
Add Salt,
 

 

 and mix well with a spatula.
 
 
 
 
Pour batter into your prepared loaf pans.
 
 
 
Bake in the preheated oven until a toothpick inserted in the center comes out clean, usually about an hour.
